Greek Cole Slaw

Ingredients
- cabbage, 1/4-inch ribbons
- fennel, 1/4-inch slice
- scallion tops, thin slice
- feta cheese, crumbled
- lemon juice
- olive oil
- 1/2 t cardamom
Instructions
- Whisk together the lemon juice, olive oil, and cardamom, then season to taste.
- Toss the cabbage, fennel, scallions and feta cheese in the dressing.
- Plate and serve chilled.
